Being a lighter red, Groundbreaker works well with pasta, or burgers and fries. Pair with with a gourmet style burger topped with caramelized onions, Brie cheese, and smoked maple bacon.
For Groundbreaker, our goal was to create a blend that would be non conventional, easy drinking, and yet interestingly seductive. Composed of 45% Gamay, 45% Pinot Noir, and 10% Chardonnay, each of these varieties were aged separately for about 6 months in oak on the lees. They were then blended, and left on fine lees in tank for an additional 2 months, after which the wine was filtered and bottled where it aged yet another 2 months before release.
