This Sauvignon Blanc displays a clear pale colour, with nuances of green, typical of its youth. On the nose, it shows complex and intense aromatic notes of ripe citrus, tropical fruit, and spice. The palate is an explosion of crisp freshness revealing fruit, spice, and minerality. The mid-palate is rich and smooth, displaying a subtle creaminess with a core of minerality. The finish is long and persistant, with nuances of ripe stonefruit and vanilla oak. Overall, this wine displays classic Sauvignon Blanc characteristics; crisp, integrated, and balanced.
Shellfish, appetizers of all kinds, and salads with vinaigrette are great choices. Also, enjoy this wine with white fish, chicken, vegetarian cusine, and all manner of cheeses.
Immediately after harvest, the fruit went through a skin maceration for about 4 hours in order to extract aromatics from the skins. This was followed by a gentle pressing cycle. Fermentation was done with 80% in stainless steel tank and 20% in neutral oak barrels. The idea of this strategy was to preserve aromatics and freshness typical of the variety. The cool fermentation in tank creates texture layered with the complexity of a barrel fermentation. The wine spent 2 months on fine lees to build texture and develop its aromatics. After racking and blending, the wine harmonized for two months, then fined, filtered, and bottled.
