SELFIE is bright and clear in colour with subtle green nuances. It is viscous with dense and slow legs. Its nose shows attractive and intense notes of ripe citrus, white pepper, and tropical fruit blended together with floral and mineral tones. The palate is smooth revealing ripe stonefruit and floral notes, the velvety mid palate displays a layer of creaminess and tropical fruit. The finish is long, round, and displays a nice fruit weight.
Pair this with chicken or salmon. It is also very much a patio wine that you can drink on its own, just like an "aperitif".
This a blend of 45% Chardonnay Musque, 45 % Riesling and 10 % Sauvignon Blanc. Both Chardonnay Musque and Riesling have been fermented cool in tank in order to preserve the aromatics and freshness, and kept on lees for 2 months to build up texture and fruit weight. The Sauvignon Blanc has been fermented at 80% in tank and 20% in barrel to create a fruit forward blend that incorporated texture, ripeness and freshness.
With this blend, we are trying to balance the aromatics of fragrant varieties to end up with a blend that shows layers of different aromas. Furthermore, the texture from Chardonnay Musque and Sauvignon Blanc balances very well with the crisp acidity of the Riesling.
We blended these 3 wines together in December first on fine lees and then left the blend for another 2 months of refined lees for harmony and elegance. The wine was then lightly fined, filtered, and bottled.
